Were you happy with Roux’s transformation from book—somewhat angry and withdrawn—to screenplay—completely confident and comfortable in his own skin?

Not entirely, although I can understand why it was done in this way. The novel of Chocolat was never intended to be a love story although, for purposes of the movie, the love story angle was very much enhanced. Perhaps it would have been too much to expect for that transition to be entirely seamless.
You can't judge a book by its cover.

The only thing that matters is the ending. It's the most important part of the story.

I think it would be hard to see your creation changed so much! I guess I had not thought of the novel being something other than a love story until she phrased it in those terms; having seen the movie first, I think my view was influenced by that and I kept watching and waiting for the love story to unfold....which it did in a very different way.

I think that Chocolat is a love story..but not a conventional boy meets girl one..
